Green Goddess Chickpea & Cauliflower Salad

100g Canned Chickpeas
5g Fresh Parsley
5g Fresh Mint
15g Unsalted Cashews
10ml Pure Maple Syrup
30ml Lemon Juice
10g Nutritional Yeast Flakes
- Preheat the oven to 180ºC.
- Drain the chickpeas and chop the cauliflower. Add to a baking tray, season with salt and pepper and cook for 20 minutes or until the cauliflower is golden.
- To make the green goddess sauce blitz avocado, parsley, mint, garlic, cashews, lemon juice, maple syrup and nutritional yeast flakes. Season well with salt and pepper and blitz until smooth. Add a splash of water if required.
- Add roasted cauliflower, chickpeas and rocket to a bowl. Top with green goddess dressing.
