Mediterranean White Bean & Risoni Salad

50g Risoni Pasta (weighed dry)
120g Canned Cannellini Beans (drained weight)
15g Feta Cheese
30g Greek Style Natural Yoghurt
5g Minced Garlic
10ml Lemon Juice
0.5 tsp Dried Oregano
- Cook the pasta as per the packet instructions. Drain and transfer to a bowl and allow to cool.
- Add the chopped salad vegetables, cannellini beans, feta and olives to the Risoni.
- To make the dressing whisk together, yoghurt, garlic, lemon juice, oregano, salt and pepper. Drizzle over the pasta salad.
