  1. Cook the chips in the oven according to the packet instructions. Meanwhile, prepare your other ingredients.
  2. In a non-stick pan add the onion and mince and cook until brown. Add the canned tomatoes, beans if listed and taco spice mix and allow to simmer for at least 5 minutes. 
  3. Cut your salad ingredients listed and now it’s time to assemble.
  4. Add the cooked chips to a bowl and spoon the mince mixture on top. Top with your ingredients listed.
